2. How to cover a call-off before service runs short

A call-off costs the time it takes to find somebody who is allowed to take the shift. Service runs one person short until you do.

Let’s say a 60-person restaurant gets two call-offs a day, and each takes 20 minutes of calls and texts. That is 4 hours and 40 minutes a week on the phone. The first yes is often someone near 40 hours, so the cover costs time and a half, and the section waits longer for every plate until they arrive.

3. How to stop overtime eating your restaurant profit margin

Restaurant overtime pays time and a half for the same work, so every overtime hour takes margin and gives nothing back.

Let’s say a cook earns $18 an hour, close to the $17.98 median for restaurant cooks (BLS, May 2025). At 36 hours, one more 8-hour shift takes them to 44, and 4 of those hours cost $27 instead of $18.

5. How to staff every shift to what it needs

A closing shift followed by an opening shift leaves only a few hours between them, including the trip home and back.

Let’s say a server closes at 11 PM and opens at 7 AM. That is 8 hours off.
